For years, visitors left Sitges with its charm, history, and beautiful light — but something was missing: a souvenir that truly captured its essence.
We already had Xató and Malvasia, deeply rooted in local tradition. But we needed something more — a sweet with history, easy to carry, and able to capture the vibrant spirit of Sitges.
That’s why we’ve brought back a nearly forgotten recipe: Escumes de Sitges.
Like sea foam gently fading on the shore, Escumes are light and fleeting — yet unforgettable.

Escumes de Sitges
Escumes de Sitges were first created in 1917 at the pastry shop «La Estrella».
Their name — Escumes, meaning “foam” — pays tribute to the softness of the Mediterranean. These delicate cookies melt on your palate just like waves breaking softly on the shore.
Made from almonds and meringue, they quickly became a local icon and an essential part of social life in the town. No celebration, gathering, or after-meal moment was complete without Escumes and Malvasia.
As the local saying goes:
“Escumes and Malvasia bring strength and joy.”
Although the recipe disappeared for a time, its sweet memory never faded.
Now, in 2025, this beloved tradition has been revived — bringing Escumes back as the true taste of memory and a symbol of Sitges once again.
